Turkish Shish Kebab Recipe
Ingredients:

5g green tea rubs (a mixture of green tea leaves, sugar, and spices)

500g lamb or beef, cut into 3 cm cubes

1 large onion, finely chopped

2 cloves garlic, minced

1 tablespoon yogurt

1 tablespoon tomato sauce

1 tablespoon tomato paste

1/4 teaspoon red pepper flakes

1/2 teaspoon salt

1 teaspoon dried thyme

1/2 teaspoon black pepper

1 tablespoon olive oil

1 lemon, cut into wedges, for serving

1/4 cup chopped fresh parsley, for garnish

Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:

Prepare the Green Tea Rubs:

Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the meat.

Marinate the Meat:

In a large bowl, mix the finely chopped onion, minced garlic, yogurt, tomato sauce, tomato paste, red pepper flakes, salt, dried thyme, black pepper, and olive oil. Add the meat cubes and mix well to coat evenly. Cover and refrigerate for at least 1 hour to allow the flavors to develop.

Preheat the Grill:

Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Thread the Meat:

Thread the marinated meat cubes onto skewers, leaving a little space between each cube.

Grill the Kebabs:

Place the skewers on the grill and cook for 5-7 minutes per side, or until the meat is cooked through and slightly charred. Brush with any remaining marinade during grilling for added flavor.

Transfer the grilled kebabs to a serving platter. Garnish with chopped fresh parsley and, if desired, toasted pine nuts or almonds. Serve with lemon wedges on the side.
