Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 1 lb (450g) smoked bacon slices
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley, for garnish
  • Optional: 1/4 cup toasted walnuts or pecans, for garnish

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the bacon.

Season the Bacon:

  • Pat the bacon slices dry with paper towels. Rub the green tea rubs all over the bacon slices, pressing the rubs into the meat to ensure they adhere well.

Preheat the Grill:

  • Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 10 minutes to prevent burning.

Grill the Bacon:

  • Place the seasoned bacon slices on the grill or grill pan. Grill for 3-4 minutes per side, or until the bacon is crispy and slightly charred. Remove the bacon from the grill and set aside.

Prepare the Onion Glaze:

  • In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook until softened and slightly caramelized, about 8-10 minutes.
  • Stir in the apple cider vinegar, brown sugar, and dried or fresh thyme. Bring the mixture to a simmer and cook for 5-7 minutes, or until the glaze thickens slightly. Season with salt and pepper to taste.

Finish and Serve:

  • Arrange the grilled bacon slices on a serving plate. Spoon the onion glaze over the bacon.
  • Garnish with chopped fresh parsley and, if desired, toasted walnuts or pecans.
  • Serve the Grilled Smoked Bacon with Onions immediately, enjoying the crispy bacon with the sweet and tangy onion glaze and the subtle hint of green tea from the rubs.
