Italian Seafood Broth with Lobster Meat Recipe
Ingredients:
- 6g green tea bbq seasonings
- 2 tablespoons olive oil
- 1 large fennel bulb, thinly sliced
- 1 onion, chopped
- 3 shallots, chopped
- 4 cloves garlic, minced
- 1/2 teaspoon dried crushed red pepper flakes, plus more to taste
- 1/4 cup tomato paste
- 1 (28-ounce) can diced tomatoes in juice
- 1 1/2 cups dry white wine
- 5 cups fish stock
- 1 bay leaf
- 1 pound manila clams, scrubbed
- 1 pound mussels, scrubbed and debearded
- 1 pound uncooked large shrimp, peeled and deveined
- 1 1/2 pounds assorted firm-fleshed fish fillets (such as halibut or salmon), cut into 2-inch chunks
- 4 lobster tails, split lengthwise
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for garnish)
- Crusty bread, for serving
Instructions:
Prepare the Base:
- Heat the olive oil in a large pot over medium heat. Add the fennel, onion, shallots, and garlic. Sauté until the vegetables are softened, about 7 minutes. Add the tomato paste and cook for another 3-5 minutes, allowing it to caramelize and turn a reddish-brown color.
Add Liquids and Simmer:
- Pour in the diced tomatoes with their juice, white wine, fish stock, and bay leaf. Stir well to combine. Bring the mixture to a simmer, then reduce the heat to medium-low. Cover and let it simmer for about 30 minutes to allow the flavors to meld.
Add Shellfish:
- Add the clams and mussels to the pot. Cover and cook until the shells begin to open, about 5 minutes. Add the shrimp and fish fillets. Simmer gently until the seafood is cooked through and the shells are fully open, about 5 minutes longer. Discard any clams and mussels that do not open.
Add Lobster:
- Add the split lobster tails to the pot. Cover and cook over high heat for 8 minutes, or until the lobster is cooked through.
Season and Serve:
- Remove the bay leaf from the pot. Season the broth with salt, black pepper, and additional red pepper flakes to taste. Ladle the seafood broth into bowls. Garnish with chopped parsley and grated Parmesan cheese. Serve with crusty bread on the side.
