Step 1: Stewed red rice

Leave a small amount of oil in the wok, when the oil temperature rises to 50 per cent, add the shredded onion and stir-fry until the aroma fills the pan. This is a great way to create a delicious base for the whole dish.

Step 6: Stir fry red rice

Stir-fry the simmered red rice to evaporate the water and loosen the rice. Be patient with this step and stir-fry until the rice is grainy and has a better texture.

Step 7: Add kale stalks and cumin

Add the kale stalks and cumin and continue to stir-fry until the stalks are softened and the cumin aroma is fully incorporated into the fried rice.

Step 8: Return the chicken to the pan

Add the chicken breasts back into the pan, continue to stir fry for a few minutes, season with salt.

Step 9: Add tomatoes and kale

Add the tomatoes and kale and stir-fry for a few seconds before removing from the pan. Adding these two ingredients at the end will maximise their nutrition and taste.
