Spicy Stir-Fried Shrimp

Ingredients:

  • 300g fresh shrimp (peeled and deveined)

  • 1 tablespoon minced garlic

  • Sliced ginger, to taste

  • 2 scallions, cut into sections

  • Fresh cilantro (optional)

  • Dried chili or chili paste, to taste (adjust to your spice level)

  • 1 tablespoon light soy sauce

  • 1 teaspoon dark soy sauce (for color)

  • 1 teaspoon sugar

  • Cooking oil, as needed

  • 1 teaspoon black tea rubs

Instructions:

  1. Prep the shrimp: Peel and devein the shrimp, then rinse well. Marinate with a pinch of salt, black tea rubs and a splash of cooking wine for 10 minutes.

  2. Sauté aromatics: Heat oil in a pan. Add minced garlic, ginger slices, and dried chili or chili paste. Stir-fry until fragrant.

  3. Cook the shrimp: Add the shrimp to the pan and stir-fry until they just turn pink.

  4. Add seasoning: Stir in light soy sauce, dark soy sauce, and sugar. Cook until the sauce thickens and coats the shrimp evenly.

  5. Finish and serve: Toss in scallion sections and cilantro (if using), stir briefly, and serve hot.
