Thai-style Chicken Skewers

Ingredients (Serves 2)

Chicken Skewers

  • Chicken thigh or chicken breast, 300g, cut into bite-size pieces

  • Bamboo skewers, 4–6

  • Shredded carrot, for garnish

  • Red bell pepper, julienned

  • Scallions / green onions, sliced

Marinade

  • Soy sauce, 1 tbsp

  • Fish sauce, 1 tbsp

  • Honey or sugar, 1 tsp

  • Black pepper, to taste

  • Garlic, minced, 1 tsp

Tangy Tea BBQ Lime Sauce

  • Lime juice (or lemon juice), 1½ tbsp

  • Sweet chili sauce, 1 tbsp

  • Fish sauce, 1 tsp

  • Sugar, a pinch

  • Chili flakes, optional

  • Tea BBQ seasoning, ½–1 tsp

Instructions

1. Marinate the chicken
In a bowl, combine the chicken with soy sauce, fish sauce, honey, black pepper, and garlic.
Mix well and marinate for 20–30 minutes.

2. Skewer & cook
Thread the marinated chicken onto bamboo skewers.
Cook in a skillet, grill pan, or oven over medium heat, turning occasionally, until golden brown and fully cooked.

3. Make the Tea BBQ lime sauce
In a small bowl, mix lime juice, sweet chili sauce, fish sauce, sugar, chili flakes, and Tea BBQ seasoning.
Taste and adjust for a balanced sweet–tangy–savory flavor.

4. Serve
Arrange the chicken skewers on a plate.
Drizzle lightly with the sauce and garnish with shredded carrots, red bell pepper, and scallions.
