Russian-style stewed meat(Zharkoye)

This farmhouse stew is a staple in the Russian countryside, traditionally slow-cooked overnight in a Russian stove (pechka).

Ingredients:

  • 5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • Beef 500g
  • Potatoes 4
  • Carrots 2
  • Onion 1
  • Tomato sauce 2 tablespoons
  • Bay leaves 2pieces
  • Black pepper, salt to taste

 

Instructions:

1. Meat cut into chunks and pan-fried until the surface is golden brown.

2. Vegetables cut into chunks and placed in the cast iron pot together with the meat.

3. Add tomato sauce, spices, and green tea rubs, then add enough water to cover the ingredients.

4. Simmer on low heat for 2 hours.

Key Tips:

Use a thick-bottomed cast iron pot to maintain temperature.

Add potatoes in the last 30 minutes to prevent them from becoming mushy.

You can add 1 tablespoon of flour to thicken the sauce.
