Crispy Fried Shrimp

A delightful appetizer or main course featuring succulent shrimp with a perfectly crispy, golden-brown coating.

Ingredients (serves 4):

  • For the Shrimp:
    • 400g large shrimp, peeled and deveined
    • 1 cup all-purpose flour
    • 1 tsp salt
    • 1 tsp black pepper
    • 1 tsp garlic powder
    • 1 tsp paprika
    • 1 tsp cayenne pepper (adjust to taste)
    • 2 large eggs, beaten
    • 1 cup panko breadcrumbs
    • Vegetable oil, for frying
  • For the Dipping Sauce:
    • 1/2 cup mayonnaise
    • 1 tbsp ketchup
    • 1 tbsp sweet chili sauce
    • 1 tbsp Sriracha sauce (adjust to taste)
    • 1 tsp lime juice
    • 1 tsp soy sauce
    • 1 clove garlic, minced
    • Salt and pepper, to taste

Method:

Prepare the Shrimp:

  1. Season the Flour: In a shallow bowl, combine the all-purpose flour, salt, black pepper, garlic powder, paprika, and cayenne pepper. Mix well.
  2. Prepare the Breading Station: In another shallow bowl, beat the eggs. In a third shallow bowl, place the panko breadcrumbs.
  3. Coat the Shrimp: Dredge each shrimp in the seasoned flour, shaking off any excess. Dip the shrimp into the beaten eggs, then coat evenly with the panko breadcrumbs. Place the breaded shrimp on a baking sheet.

Fry the Shrimp:

  1. Heat the Oil: Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
  2. Fry the Shrimp: Fry the shrimp in batches for 2-3 minutes until golden brown and crispy. Be careful not to overcrowd the pan, as this can lower the oil temperature and make the shrimp less crispy.
  3. Drain the Shrimp: Remove the fried shrimp from the oil and drain on paper towel-lined plates to remove excess oil.

Prepare the Dipping Sauce:

  1. Mix the Sauce: In a small bowl, combine the mayonnaise, ketchup, sweet chili sauce, Sriracha sauce, lime juice, soy sauce, minced garlic, salt, and pepper. Mix well to combine. Adjust the spiciness and flavor to your taste.

Serve:

  1. Arrange the crispy fried shrimp on a serving platter.
  2. Serve with the dipping sauce on the side.
  3. Optionally, garnish with lime wedges or chopped parsley for a fresh touch.

Chef's Notes:

  • Breading Tips: Double-dipping the shrimp in the egg wash can help create an extra crispy coating.
  • Oil Temperature: Maintaining the oil temperature at 350°F (175°C) is crucial for achieving a crispy exterior without overcooking the shrimp inside.
  • Storage: Leftover fried shrimp can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 375°F (190°C) for a few minutes to restore crispiness.
  • Variations: You can customize the dipping sauce by adding more or less Sriracha or sweet chili sauce, depending on your preference. For a healthier option, you can also bake the shrimp instead of frying them.
