6 large sea scallops, shells cleaned and reserved

Instructions:

Prepare the Scallops:

Rinse the scallops under cold water and pat them dry with paper towels. Remove the side muscle from each scallop and discard. Place the scallops in a bowl and season with a pinch of salt and black pepper.

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
