Purple Rice and Coconut Slice Dessert Recipe

Ingredients:
  • 200g purple rice
  • 300ml coconut milk
  • 100g sugar
  • 50g unsalted butter, melted
  • 1/4 cup desiccated coconut, for coating
  • 1/2 cup fresh coconut flakes, for garnish
  • 1/4 cup chopped fresh mint, for garnish
Instructions:
  1. Prepare the Purple Rice:
    • Rinse the purple rice under cold water until the water runs clear. Soak the rice in water for at least 3 hours. Drain the rice and place it in a steamer or a pot with a steaming basket. Steam the rice for about 30-40 minutes, or until tender. Set aside to cool.
  2. Mix the Rice and Coconut Milk:
    • In a large bowl, combine the cooked purple rice, coconut milk, sugar, and melted butter. Mix well until the rice is evenly coated with the mixture.
  3. Shape the Rice into Slices:
