Purple Rice and Coconut Slice Dessert Recipe

200g purple rice

300ml coconut milk

100g sugar

50g unsalted butter, melted

1/4 cup desiccated coconut, for coating

1/2 cup fresh coconut flakes, for garnish

1/4 cup chopped fresh mint, for garnish
Instructions:

Prepare the Purple Rice:

Rinse the purple rice under cold water until the water runs clear. Soak the rice in water for at least 3 hours. Drain the rice and place it in a steamer or a pot with a steaming basket. Steam the rice for about 30-40 minutes, or until tender. Set aside to cool.

Mix the Rice and Coconut Milk:

In a large bowl, combine the cooked purple rice, coconut milk, sugar, and melted butter. Mix well until the rice is evenly coated with the mixture.

Shape the Rice into Slices:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Shape the rice mixture into thin slices, about 1/2-inch thick. Place the slices on the prepared baking sheet and press the top of each slice into the desiccated coconut to coat.
