Ravioli Recipe

Ingredients:
  • 5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 200g fresh spinach, blanched and finely chopped
  • 200g ricotta cheese
  • 100g grated Parmesan cheese
  • 2 large eggs
  • Salt and freshly ground black pepper
  • 300g fresh pasta sheets (or store-bought)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup white wine (optional)
  • 1/4 cup chicken broth
  • 1/4 cup tomato sauce
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley, for garnish
  • Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the filling.
  2. Prepare the Filling:
    • In a large bowl, combine the blanched and finely chopped spinach, ricotta cheese, grated Parmesan cheese, and eggs. Mix well to combine. Season with salt and pepper to taste. Rub the green tea rubs all over the filling mixture, pressing the rubs in to ensure they adhere well.
  3. Assemble the Ravioli:
    • Lay out the fresh pasta sheets on a lightly floured surface. Place spoonfuls of the filling mixture at regular intervals on one half of the pasta sheet. Fold the other half of the sheet over the filling and press around each mound of filling to seal the ravioli. Use a fork to crimp the edges for a better seal.
  4. Cook the Ravioli:
    • Bring a large pot of salted water to a boil. Cook the ravioli for about 3-4 minutes, or until they float to the surface and are cooked through.
  5. Sauté the Aromatics:
    • Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  6. Simmer the Sauce:
    • Stir in the white wine (if using), chicken broth, and tomato sauce. Bring the mixture to a simmer and cook until the sauce thickens slightly, about 5-7 minutes. Stir in the chopped basil and season with salt and pepper to taste.
  7. Finish and Serve:
    • Transfer the cooked ravioli to a serving plate. Spoon the sauce over the ravioli. Garnish with chopped fresh parsley and, if desired, toasted pine nuts or almonds.
  8. Serve Immediately:
    • Serve the Ravioli immediately, enjoying the tender, flavorful pasta with the rich, savory sauce and the subtle hint of green tea from the rubs.
