Ingredients:
  • 5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 2 large sponge gourds (loofahs), peeled and cut into 2-inch segments
  • 1 lb (450g) ground pork or beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped green onions
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh cilantro, for garnish
  • Optional: 1/4 cup toasted sesame seeds, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the meat mixture.
  2. Hollow Out the Sponge Gourds:
    • Using a small spoon or a melon baller, carefully hollow out the center of each sponge gourd segment, creating a cavity for the meat mixture. Be careful not to pierce through the sides.
