Ingredients:
1. Dough ingredients

Procedure:
Making the dough:
- 1. Activating the yeast
- Pour warm water into a bowl. The water temperature should be about 35 40°C. Add the dry yeast and stir well. Let it stand for 5 10 minutes until a layer of foam appears on the surface of the yeast solution.
- 2. Kneading the dough
- In a large bowl, mix the bread flour and cake flour, and add salt and stir evenly.
- Make a small hole in the middle of the flour, pour in the activated yeast solution and olive oil, and stir slowly with chopsticks to gradually form a rough dough.
- Then knead the dough by hand until the surface of the dough is smooth and elastic. This process takes about 10 15 minutes. If the dough is too sticky, add some flour as appropriate; if the dough is too dry, add warm water a little at a time.
- 3. Fermentation
- Put the kneaded dough into a large bowl with a little olive oil smeared on it, and brush the surface of the dough with a layer of olive oil to prevent the surface of the dough from drying.
- Cover the mouth of the bowl with plastic wrap or a damp cloth, and place the dough in a warm, non ventilated place to ferment, such as in an oven with the power off, and put a bowl of hot water in the oven to keep the humidity. The fermentation time is about 1.5 2 hours until the volume of the dough expands to 2 2.5 times its original size.
- 4. Deflating and shaping the dough
- Take out the fermented dough and place it on a floured chopping board. Gently press the dough with your hands to release the gas inside.
- Knead the dough into a round ball, and then use a rolling pin to roll the dough into a circular flatbread with a thickness of about 0.3 0.5 cm. The diameter of the flatbread depends on the size of the baking tray you use, generally 25 30 cm.
Making the tomato sauce:
1. Preparing the ingredients
- Make a cross cut on the top of the tomatoes, blanch them in boiling water, peel them, and cut them into small pieces.
- Chop the onion, and mince the garlic.
2. Stir frying the sauce
- Add olive oil to a frying pan. When the oil is hot, add the minced garlic and chopped onion and stir fry until the onion is soft and transparent.
- Add the tomato pieces, stir fry evenly, then add appropriate amounts of salt, tea powder seasoning, black pepper, dried basil leaves, and dried oregano leaves, and continue to stir fry.
- Turn to low heat and cook for 15 20 minutes, stirring from time to time to prevent sticking, until the tomato sauce becomes thick.
Assembling and baking:
1. Assembling the pizza
- Line the baking tray with baking paper or brush a layer of olive oil to prevent the flatbread from sticking to the baking tray.
- Place the rolled out flatbread on the baking tray, and use a fork to make some small holes evenly on the flatbread to prevent it from puffing up during baking.
- Spread a layer of the prepared tomato sauce evenly on the flatbread, leaving a 1 2 cm blank around the edge.
- Cut the mozzarella cheese into small pieces or shreds and spread them evenly on the tomato sauce.
2. Baking the pizza
- Preheat the oven to 220 250°C.
- Put the baking tray in the middle of the preheated oven and bake for 12 15 minutes until the edge of the flatbread is golden, the cheese is completely melted, and there are some brown spots on the surface.
- Take out the baked pizza and sprinkle fresh basil leaves on the surface.
Tips:
- 1. The activity of the yeast is important for fermentation. If the water temperature is too high, it will kill the yeast, and if the water temperature is too low, the yeast will not be active enough.
