Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 1 lb (450g) flank steak or sirloin, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup beef broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1/4 cup fresh mint leaves, chopped
  • Salt and freshly ground black pepper
  • 1/4 cup chopped green onions, for garnish
  • Optional: 1/4 cup toasted sesame seeds, for garnish

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the beef strips.

Season the Beef Strips:

  • Pat the beef strips dry with paper towels. Rub the green tea rubs all over the beef, pressing the rubs into the meat to ensure they adhere well.

Sauté the Aromatics:

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.

Cook the Beef Strips:

  • Add the seasoned beef strips to the skillet and cook, stirring frequently, until the beef is browned and cooked through, about 3-4 minutes.

Prepare the Sauce:

  • In a small bowl, whisk together the soy sauce, beef broth, rice vinegar, and honey. Pour the sauce into the skillet with the beef and onions, stirring to combine.
  • Bring the mixture to a simmer and cook for 2-3 minutes, or until the sauce thickens slightly and the beef is fully cooked.

Finish and Serve:

  • Stir in the chopped fresh mint leaves and cook for an additional 1 minute, allowing the mint to infuse the sauce.
  • Transfer the Mint Beef Strips to a serving plate. Garnish with chopped green onions and, if desired, toasted sesame seeds.
  • Serve the Mint Beef Strips immediately, enjoying the tender beef with the aromatic and refreshing mint sauce, and the subtle hint of green tea from the rubs.
