Ingredients:

  • 2 tablespoons black tea rubs (a mixture of black tea leaves, brown sugar, paprika, salt, and black pepper)
  • 2 cans solid white albacore tuna, drained
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup sweet pickle relish
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 4 slices of whole grain bread, for serving

Instructions:

Prepare the Tea Rub:

  • Combine the black tea rubs ingredients in a small bowl.

Mix the Tuna Salad:

  • In a medium bowl, combine the drained tuna, mayonnaise, chopped parsley, celery, red onion, sweet pickle relish, and lemon juice. Mix well to combine.

Season the Salad:

  • Stir in the tea rub mixture, adjusting the amount to taste. Season with salt and pepper.

Serve the Salad:

  • Divide the tuna salad evenly among the slices of bread. Top with additional lettuce or tomato if desired, and serve immediately.
