Vegetable Beef Stew

Ingredients:

  • 300 g beef chunks

  • 1 potato (diced)

  • 1 carrot (chopped)

  • ½ zucchini (chopped)

  • ½ onion (chopped)

  • A handful of celery or fresh cilantro (for garnish)

  • 2 tbsp tomato paste

  • 1 tbsp black tea rubs
  • Salt and black pepper, to taste

  • Olive oil, as needed

Instructions:

  1. Prepare the Beef
    Cut the beef into chunks and marinate with a little salt, black tea rubs and black pepper for 10 minutes.

  2. Sear the Beef
    Heat olive oil in a pot and sear the beef until golden brown on the outside.

  3. Add Vegetables
    Stir in onion, carrot, potato, and zucchini. Cook for 2–3 minutes until slightly softened.

  4. Season & Simmer
    Add tomato paste, then pour in enough water or beef broth to cover the ingredients.

  5. Slow Cook
    Simmer gently over low heat for 30–40 minutes, until the beef is tender and the vegetables are flavorful.

  6. Finish & Serve
    Adjust seasoning with salt and black pepper. Garnish with chopped cilantro or celery before serving.
