Ingredients:

2 bowls of day-old rice (cold & firm works best)

2 eggs

1/2 carrot, julienned

1/2 green bell pepper, sliced

1 tomato, sliced

1/2 onion, sliced

Fried chicken bites or chicken tenders (store-bought or homemade)

Chopped scallions, to taste

Cooking oil

1 tbsp soy sauce
-
1 tbsp black tea rubs
-
A pinch of curry powder or cumin (for extra flavor)

Salt & black pepper, to taste

Lime wedges, for serving
Instructions:

Scramble the Eggs: Heat a little oil in a pan. Scramble the eggs and set aside.

Sauté the Veggies: In the same pan, add more oil. Stir-fry onion until fragrant, then add carrot, bell pepper, and tomato. Cook briefly.

Add Rice & Seasoning: Add the cold rice, stir well to separate the grains. Season with soy sauce, black tea rubs, curry powder, salt, and black pepper.

Add Eggs & Chicken: Stir in the scrambled eggs and crispy chicken. Toss everything evenly.

Finish & Serve: Sprinkle chopped scallions on top. Serve with a wedge of lime for a fresh zing.
