Spicy Veg & Egg Fried Rice with Crispy Chicken

Ingredients:

  • 2 bowls of day-old rice (cold & firm works best)

  • 2 eggs

  • 1/2 carrot, julienned

  • 1/2 green bell pepper, sliced

  • 1 tomato, sliced

  • 1/2 onion, sliced

  • Fried chicken bites or chicken tenders (store-bought or homemade)

  • Chopped scallions, to taste

  • Cooking oil

  • 1 tbsp soy sauce

  • 1 tbsp black tea rubs

  • A pinch of curry powder or cumin (for extra flavor)

  • Salt & black pepper, to taste

  • Lime wedges, for serving

Instructions:

  1. Scramble the Eggs: Heat a little oil in a pan. Scramble the eggs and set aside.

  2. Sauté the Veggies: In the same pan, add more oil. Stir-fry onion until fragrant, then add carrot, bell pepper, and tomato. Cook briefly.

  3. Add Rice & Seasoning: Add the cold rice, stir well to separate the grains. Season with soy sauce, black tea rubs, curry powder, salt, and black pepper.

  4. Add Eggs & Chicken: Stir in the scrambled eggs and crispy chicken. Toss everything evenly.

  5. Finish & Serve: Sprinkle chopped scallions on top. Serve with a wedge of lime for a fresh zing.
