Ingredients

Lamb or beef: 500 grams (cut into small pieces)

Onions: 2 (medium-sized, chopped)

Garlic: 3 - 4 cloves (chopped)

Tomatoes: 2 - 3 (chopped)

Green peppers: 2 - 3 (chopped)

Potatoes: 2 - 3 (peeled and cut into pieces)

Olive oil: 3 - 4 tablespoons

Salt: 1.5 - 2 teaspoons

Black pepper powder: 1 - 1.5 teaspoons

Cumin powder: 1 - 2 teaspoons

Dried thyme: 1 - 2 teaspoons

Dried oregano: 1 - 2 teaspoons
-
White wine (optional): 1/2 cup

Beef broth or water: 1 - 1.5 cups

Tea seasoning: 3- 5g
Instructions
1. Cut the lamb or beef into even pieces and marinate with salt, tea dry rubs, black pepper and 1 tablespoon of olive oil for 15-20 minutes.
2. Chop and dice the onion, garlic, tomatoes, bell peppers and potatoes separately.
3. Heat 2-3 tablespoons of olive oil in a large pan over medium-high heat.
4. Add the marinated meat and sauté until the surface changes color, set aside.
5. In the same pan, add the chopped onion and garlic and sauté until the onion is soft and transparent.
6. Add the chopped tomatoes and bell peppers and continue to sauté for 5-7 minutes until the vegetables are soft.
7. Return the sautéed meat to the pan and add the diced potatoes.
8. Add the cumin powder, dried thyme and dried oregano and stir well.
9. If using white wine, pour it into the pan at this time and cook until the alcohol evaporates, about 2-3 minutes.
10. Add beef stock or water to cover the ingredients, stir well, and add appropriate amount of salt and black pepper to taste.
11. Pour the mixture into the clay pot and cover it with a lid.
12. If you have an oven, bake the clay pot in an oven preheated to 180-200°C for 1.5-2 hours, until the meat and vegetables are very soft.
13. If you don't have an oven, you can simmer it slowly on the stovetop over low heat for about 2-2.5 hours, stirring from time to time to prevent sticking.
14. When the stew is done, serve the clay pot and break the lid of the clay pot in front of the guests (if it is traditional), or carefully lift the lid to let the aroma come out, and then enjoy.
