How to make Muffins

Ingredients

For the muffin part:

  • All - purpose flour: 200 - 250 g

  • Granulated sugar: 100 - 120 g

  • Eggs: 2 - 3

  • Milk: 150 - 200 ml

  • Unsalted butter: 100 - 120 g, melted

  • Baking powder: 1 - 2 teaspoons

  • Salt: 1 - 2 g

For the decoration part:

  • Powdered sugar: 50 - 70 g

  • Lemon juice: 10 - 15 ml

  • Fresh pomegranate seeds: an appropriate amount

  • Fresh green leaves (such as rosemary or mint): an appropriate amount

  • Tea rubs: 3- 5g

Instructions

Make the pancake batter

1. In a large bowl, mix all-purpose flour, caster sugar, baking powder and salt.

2. In another bowl, beat eggs and add milk and melted butter and mix well.

3. Pour liquid mixture into flour mixture and stir until a smooth batter forms.

Bake the pancakes

1. Preheat oven to 180 - 200°C.

2. Pour pancake batter into pancake tins, filling each tin about two-thirds full.

3. Bake in preheated oven for 15 - 20 minutes, until pancakes are golden brown and cooked through.

4. Remove pancakes from oven and cool on a cooling rack.

Decorate the pancakes

1. In a small bowl, mix the icing sugar, tea rubs and lemon juice and stir until a smooth icing forms.

2. Drizzle icing sugar over cooled pancakes.

3. Decorate the pancakes with fresh pomegranate seeds and green leaves.

Tips

  1. The melted butter should be slightly cooled before adding to the batter to avoid scalding the eggs.

  2. The baking time of the muffins can be adjusted appropriately according to the size of the muffins and the power of the oven.

  3. You can add some vanilla extract or cinnamon powder to the muffin batter according to your personal preference to increase the flavor.
