Tea Rubbed Fruit Glazed Chicken
Ingredients:
- 2 tablespoons black tea rubs (a mixture of black tea leaves, brown sugar, paprika, salt, and black pepper)
- 4 bone-in, skin-on chicken breasts
- 1/2 cup mixed fruit jam (such as apricot, peach, or raspberry)
- 1/4 cup orange juice
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 teaspoon grated orange zest
- Salt and pepper, to taste
Instructions:
Prepare the Tea Rub:
- Combine the black tea rubs ingredients in a small bowl.
Season the Chicken:
- Pat the chicken breasts dry with paper towels. Rub the tea rub mixture evenly onto all sides of each chicken breast.
Preheat the Oven:
- Preheat your oven to 375°F (190°C).
Prepare the Glaze:
- In a small saucepan, combine the mixed fruit jam, orange juice, honey, Dijon mustard, and grated orange zest. Heat over medium heat, stirring until the jam is melted and the mixture is well combined.
Roast the Chicken:
- Place the seasoned chicken breasts on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
Glaze the Chicken:
- Remove the chicken from the oven and brush the top of each breast with the prepared fruit glaze.
Broil the Chicken:
- Switch the oven to broil and broil the chicken for an additional 2-3 minutes, or until the glaze is caramelized and bubbly.
Serve:
- Remove the chicken from the oven and let it rest for a couple of minutes. Serve the tea rubbed fruit glazed chicken hot, with a side of steamed vegetables or rice, and additional glaze on the side if desired.
