Ingredients
- Chicken legs (4 - 6, adjust according to the number of diners)
- Potatoes (2 - 3, medium - sized)
- Onion (0.5)
- Garlic (3 - 4 cloves)
- Carrot (1, optional, for adding color and nutrition)
- Lemon (0.5, optional, for adding a fresh flavor)
- Fresh rosemary or thyme (optional, several branches, for adding flavor)
- Salt (appropriate amount)
- Black pepper (appropriate amount)
- Olive oil (2 - 3 tablespoons)
- Light soy sauce (1 - 2 tablespoons)
- Honey (1 - 2 tablespoons, for brushing the surface of chicken legs to enhance color and sweetness)
- Butter (20 - 30 g, for mashed potatoes)
- Milk (50 - 100 ml, for mashed potatoes, adjust according to the consistency of mashed potatoes)
- Black tea seasoning(3g)

Wash the chicken legs and cut them a few times with a knife to make it easier to season.

Place the chicken legs in a large bowl and add salt, black pepper, olive oil, and soy sauce, mix well, and marinate for 20-30 minutes. If you have time, you can put the chicken legs in the refrigerator to marinate for a longer time, which will make the flavor more intense.

While the chicken legs are marinating, prepare the other ingredients. Dice the onion, mince the garlic, and dice the carrots (if using). Slice the lemon (if using).

Preheat the oven to 200℃. Line a baking sheet with tin foil, place the marinated chicken legs on the baking sheet, and place the onion pieces, carrot pieces (if using) and minced garlic around them.

If using fresh rosemary or thyme, you can place it on the chicken legs.

Place the baking sheet in the preheated oven and bake for 25-30 minutes, then remove the baking sheet, turn the chicken legs over, and bake for another 20-25 minutes, until the surface of the chicken legs is golden and cooked through. During the roasting process, you can take out the chicken legs every once in a while and brush them with a layer of honey, which will make the surface of the chicken legs more attractive and taste better.

While the chicken legs are roasting, make mashed potatoes. Peel the potatoes, cut them into small pieces, put them in a pot, add enough water, and cook until the potatoes are soft. You can easily insert the potato cubes with chopsticks to judge whether they are cooked.

Take out the cooked potato cubes, drain the water, put them in a large bowl, and mash the potatoes with a spoon or a potato mashing tool.

Add butter and milk, continue to stir until the mashed potatoes become smooth and delicate, and add appropriate amount of salt and black pepper to taste.

Place the roasted chicken legs on a plate and surround them with mashed potatoes. You can sprinkle some chopped green onions or Black tea seasoning on the mashed potatoes as decoration according to your personal preference. If there are lemon slices, you can squeeze some lemon juice on the chicken legs to add a refreshing taste.
