French Grilled Steak PlatterIngredients:

  • Various cuts of steak (such as Ribeye, Sirloin, Filet Mignon): 400g each
  • Salt: to taste
  • Freshly ground black pepper: to taste
  • Olive oil: 2 tablespoons
  • Butter: 50g
  • Shallots: 2, finely chopped
  • Red wine: 1/2 cup (optional)
  • Dijon mustard: 1 tablespoon
  • Thyme or rosemary: a sprig
  • Beef stock: 1/2 cup
  • Tea rubs:5g
  • Mixed greens or arugula: for serving
  • Cherry tomatoes: 1 cup, halved
  • Balsamic glaze: 2 tablespoons (optional)

Instructions:

  • Prepare the Steaks: Pat the steaks dry with paper towels. Season both sides generously with salt and freshly ground black pepper.
  • Heat the Pan: Heat a heavy-bottomed pan over medium-high heat. Add a tablespoon of olive oil to the pan.
  • Sear the Steaks: Place the steaks in the hot pan and sear for 2-3 minutes on each side for a nice crust. Adjust the heat as necessary to avoid burning.
  • Add Aromatics: Add the finely chopped shallots and a sprig of thyme or rosemary to the pan. If using, pour in the red wine and let it reduce by half.
  • Finish Cooking: Lower the heat, add the butter, and continue to cook the steaks to your desired doneness. Use a spoon to baste the steaks with the pan juices.
  • Rest the Steaks: Remove the steaks from the pan and let them rest on a plate for about 5 minutes to allow the juices to redistribute.
  • Prepare the Salad: While the steaks rest, toss the mixed greens with a simple vinaigrette and Tea rubs, and arrange on a serving platter with the cherry tomatoes.
  • Serve: Slice the rested steaks against the grain and arrange them on the platter with the salad. Drizzle with balsamic glaze if desired.

Tips:

  • Let the steaks come to room temperature before cooking for even cooking.
  • Use a meat thermometer to check the internal temperature for precise doneness.
  • The resting time allows the steaks to relax, ensuring tender and juicy meat.
  • Pair with a robust red wine to complement the robust flavors of the steaks.
