Smoked Salmon Scone Recipe

Ingredients:
  • 5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup heavy cream
  • 1/4 cup smoked salmon, finely chopped
  • 1/4 cup finely chopped fresh dill
  • 1 large egg, beaten (for egg wash)
  • 1/4 cup chopped fresh parsley, for garnish
Instructions:
  1. Prepare the Green Tea Rubs:
    • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the smoked salmon.
  2. Combine Dry Ingredients:
    • In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  3. Cut in the Butter:
    • Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
  4. Add Wet Ingredients:
    • Stir in the heavy cream until the dough just comes together. Be careful not to overmix.
  5. Fold in Salmon and Dill:
    • Gently fold in the finely chopped smoked salmon and fresh dill.
  6. Shape the Scones:
    • Turn the dough out onto a lightly floured surface. Pat the dough into a circle about 1 inch thick. Cut the circle into 8 wedges. Place the wedges on a baking sheet lined with parchment paper.
  7. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  8. Brush with Egg Wash:
    • Brush the tops of the scones with the beaten egg.
  9. Bake the Scones:
    • Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  10. Finish and Serve:
    • Remove the scones from the oven and let them cool slightly on the baking sheet. Transfer to a serving plate and garnish with chopped fresh parsley.
