Grilled Tilapia Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 1 lb (450g) tilapia fillets, skin removed
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/4 cup white wine (optional)
- 1/4 cup chicken or fish broth
- 1 tablespoon Dijon mustard
- Salt and freshly ground black pepper
- 1/4 cup chopped fresh parsley, for garnish
- Optional: 1/4 cup toasted pine nuts or almonds, for garnish
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the tilapia fillets.
Season the Tilapia Fillets:
- Pat the tilapia fillets dry with paper towels. Rub the green tea rubs all over the fillets, pressing the rubs into the flesh to ensure they adhere well.
Preheat the Grill:
- Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 10 minutes to prevent burning.
Grill the Tilapia:
- Brush the olive oil over the tilapia fillets. Place the fillets on the grill or grill pan, skin-side down if applicable. Grill for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
Prepare the Sauce:
- In a small skillet, heat a small amount of olive oil over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
- Stir in the lemon juice, white wine (if using), chicken or fish broth, and Dijon mustard. Bring the mixture to a simmer and cook for 3-4 minutes, or until the sauce thickens slightly. Season with salt and pepper to taste.
Finish and Serve:
- Remove the grilled tilapia fillets from the grill and let them rest for a few minutes. Transfer the fillets to a serving plate.
- Spoon the sauce over the tilapia fillets. Garnish with chopped fresh parsley and, if desired, toasted pine nuts or almonds.
- Serve the Grilled Tilapia immediately, enjoying the tender, flavorful fish with the tangy sauce and the subtle hint of green tea from the rubs.
