Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 1 lb (450g) fresh mackerel fillets, skin on
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup white wine (optional)
  • 1/4 cup chicken or fish broth
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley, for garnish
  • Optional: 1/4 cup crumbled feta cheese, for garnish

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the mackerel fillets.

Season the Mackerel Fillets:

  • Pat the mackerel fillets dry with paper towels. Rub the green tea rubs all over the fillets, pressing the rubs into the flesh to ensure they adhere well.

Preheat the Grill:

  • Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 10 minutes to prevent burning.

Grill the Mackerel:

  • Place the seasoned mackerel fillets, skin-side down, on the grill or grill pan. Grill for 3-4 minutes per side, or until the fish is cooked through and flakes easily with a fork. The skin should be crispy and golden brown.

Prepare the Bell Peppers:

  • In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  • Add the sliced red, yellow, and green bell peppers to the skillet. Cook, stirring occasionally, until the peppers are tender and slightly charred, about 5-7 minutes.
  • Stir in the white wine (if using) and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Add the chicken or fish broth and Dijon mustard, and simmer for 2-3 minutes, or until the sauce thickens slightly. Season with salt and pepper to taste.

Finish and Serve:

  • Remove the grilled mackerel fillets from the grill and let them rest for a few minutes. Transfer the fillets to a serving plate.
  • Spoon the bell pepper mixture and sauce over the mackerel fillets. Garnish with chopped fresh parsley and, if desired, crumbled feta cheese.
  • Serve the Grilled Mackerel with Colorful Bell Peppers immediately, enjoying the tender, flavorful fish with the vibrant, aromatic vegetables and the subtle hint of green tea from the rubs.
