Ingredients:

  • 4-5 green bell peppers (preferably slightly charred)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup chicken or fish broth
  • 1/4 cup white wine (optional)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh cilantro, for garnish
  • Optional: 1/4 cup toasted sesame seeds, for garnish

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the cod fillets.

Season the Cod Fillets:

  • Pat the cod fillets dry with paper towels. Rub the green tea rubs all over the fillets, pressing the rubs into the flesh to ensure they adhere well.

Prepare the Burnt Green Peppers:

  • Preheat your grill or broiler to high heat. Place the green bell peppers directly on the grill or under the broiler, turning occasionally until the skin is charred and blistered. Alternatively, you can use a gas stove and char the peppers directly over the flame.
  • Once charred, place the peppers in a bowl and cover with plastic wrap. Let them steam for 10 minutes. Then, peel off the charred skin and discard. Roughly chop the peppers.

Cook the Cod Fillets:

  • Heat the olive oil in a large skillet over medium-high heat. Place the seasoned cod fillets, skin-side down, in the skillet and sear for 3-4 minutes, or until the skin is crispy and golden brown. Flip the fillets and cook for another 3-4 minutes, or until the internal temperature reaches 145°F (63°C).

  • In the same skillet, add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  • Stir in the chopped burnt green peppers, chicken or fish broth, white wine (if using), soy sauce, rice vinegar, and grated ginger. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce thickens slightly.

Finish and Serve:

  • Place the cooked cod fillets on a serving plate. Spoon the burnt green pepper sauce over the fillets.
  • Garnish with chopped fresh cilantro and, if desired, toasted sesame seeds.
