Mashed Potato-Crusted Luncheon Meat Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 1 lb (450g) luncheon meat (such as Spam or similar), sliced into 1/2-inch thick pieces
- 2 cups mashed potatoes (prepared with butter and cream)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- Salt and freshly ground black pepper
- 1/4 cup chopped fresh parsley, for garnish
- Optional: 1/4 cup shredded mozzarella cheese, for topping
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the luncheon meat.
Season the Luncheon Meat:
- Pat the luncheon meat slices dry with paper towels. Rub the green tea rubs all over the slices, pressing the rubs into the meat to ensure they adhere well.
Prepare the Mashed Potato Crust:
- In a large bowl, mix the mashed potatoes with the finely chopped onion, minced garlic, grated Parmesan cheese, and a pinch of salt and pepper. Stir until well combined.
Coat the Luncheon Meat:
- Place the flour in a shallow dish. Dip each seasoned luncheon meat slice into the flour, shaking off any excess. Then, dip the slices into the beaten eggs, coating them evenly.
- Press the mashed potato mixture onto the coated luncheon meat slices, ensuring they are evenly covered with the potato crust.
Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
Bake the Luncheon Meat:
- Place the potato-crusted luncheon meat slices on the prepared baking sheet. Bake for 20-25 minutes, or until the crust is golden brown and crispy. If desired, sprinkle shredded mozzarella cheese over the top during the last 5 minutes of baking to melt the cheese.
Finish and Serve:
- Remove the baked luncheon meat from the oven and let it cool slightly. Transfer the slices to a serving plate.
- Garnish with chopped fresh parsley.
- Serve the Mashed Potato-Crusted Luncheon Meat immediately, enjoying the crispy potato crust and the tender, flavorful luncheon meat with the subtle hint of green tea from the rubs.
