Pineapple Teriyaki Tofu Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 1 block (14 oz) firm or extra-firm tofu, drained and patted dry
- 1 fresh pineapple, peeled, cored, and cut into 1-inch cubes (or 1 cup canned pineapple chunks, drained)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons mirin (Japanese sweet rice wine) or dry sherry
- 2 tablespoons sake or dry white wine (optional)
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1/4 cup chopped green onions, for garnish
- Optional: 1/4 cup toasted sesame seeds, for garnish
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to add a unique flavor to the tofu.
Prepare the Tofu:
- Cut the tofu into 1-inch cubes. In a bowl, toss the tofu cubes with the green tea rubs, ensuring they are well coated.
Make the Teriyaki Sauce:
- In a small saucepan, combine the soy sauce, brown sugar, mirin, sake (if using), minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves.
- In a small bowl, mix the cornstarch with water to form a smooth slurry. Gradually stir the cornstarch mixture into the saucepan, and continue to simmer until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.
Cook the Tofu and Pineapple:
- Heat a large skillet or wok over medium-high heat. Add the tofu cubes and cook until they are golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the pineapple chunks and cook until they are slightly caramelized, about 3-4 minutes.
Combine and Finish:
- Return the tofu to the skillet with the pineapple. Pour the teriyaki sauce over the tofu and pineapple, and toss gently to coat everything evenly. Cook for another 2-3 minutes, allowing the flavors to meld together.
Serve:
- Transfer the Pineapple Teriyaki Tofu to a serving plate. Garnish with chopped green onions and, if desired, toasted sesame seeds.
- Serve the dish immediately, enjoying the combination of the crispy tofu, sweet pineapple, and rich teriyaki sauce with a hint of green tea from the rubs.
