Carbon-Grilled Pig's Tail with Green Tea BBQ Seasonings
Ingredients:
- 6g green tea BBQ seasonings
- 2 pounds (about 900g) pig's tails, cleaned and cut into 2-inch pieces
- 2 slices ginger, minced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon toasted sesame oil
- Fresh cilantro, chopped (for garnish)
Instructions:
Clean the Pig's Tails:
- Rinse the pig's tails thoroughly under cold water. Use a knife to scrape away any remaining dirt or hairs. This step ensures the meat is clean and ready for boiling。
Boil the Pig's Tails:
- Place the pig's tails in a large pot and cover with water. Add the minced ginger and garlic. Bring to a boil, then reduce the heat to a simmer. Cook for about 45 minutes to 1 hour, or until the tails are tender。
Prepare the Marinade:
- In a bowl, mix together the soy sauce, rice vinegar, brown sugar, Shaoxing wine, and toasted sesame oil. Add 3g of the green tea BBQ seasonings to the marinade。
Marinate the Pig's Tails:
- Once the pig's tails are tender, drain and pat them dry with paper towels. Place the tails in a large bowl and pour the marinade over them. Toss to coat evenly. Let the tails marinate for at least 30 minutes in the refrigerator。
Grill the Pig's Tails:
- Preheat your grill or grill pan to medium-high heat. Remove the pig's tails from the marinade and place them on the grill. Grill for about 10-15 minutes, turning occasionally to ensure even cooking and to prevent burning。
Apply Remaining Marinade:
- During the last 5 minutes of grilling, brush the remaining marinade onto the pig's tails to create a sticky glaze。
Garnish and Serve:
- Remove the grilled pig's tails from the grill. Sprinkle with the remaining 3g of green tea BBQ seasonings. Garnish with chopped fresh cilantro. Serve hot。
- This recipe combines the tender texture of pig's tails with the unique aroma of green tea BBQ seasonings and a sweet, savory glaze, making it a delicious and exotic dish for any barbecue gathering。
