Baked Vegetables with Cheese

Ingredients:

  • 1 zucchini, diced

  • 2 tomatoes, chopped

  • ½ onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • 1 tbsp black tea rubs

  • Salt & black pepper – to taste

  • 1 tsp dried Italian herbs (e.g., thyme, oregano)

  • 150g shredded cheese (Mozzarella or Cheddar)

Instructions:

  1. Preheat oven to 180°C (350°F).

  2. In a skillet, heat olive oil and sauté the onion and garlic until fragrant. Add zucchini and tomatoes. Stir-fry until slightly softened. Season with salt, black tea rubs, pepper, and Italian herbs.

  3. Transfer the veggie mixture into a baking dish and spread evenly.

  4. Sprinkle generously with shredded cheese.

  5. Bake for about 20 minutes, or until the cheese is melted and lightly golden.

  6. Garnish with fresh parsley or basil before serving, if desired.
