5g green tea rubs (a mixture of green tea leaves, sugar, and spices)
-
2 large eggplants, sliced into 1/2-inch thick rounds
-
1 cup all-purpose flour
-
2 large eggs, beaten
-
1 1/2 cups panko breadcrumbs
-
Vegetable oil, for frying
-
Salt and freshly ground black pepper
-
1/4 cup chopped fresh parsley, for garnish
-
Optional: 1/4 cup grated Parmesan cheese, for garnish
Instructions:
-
Prepare the Green Tea Rubs:
-
Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the eggplant slices.
-
-
Season the Eggplant Slices:
-
Pat the eggplant slices dry with paper towels. Rub the green tea rubs all over the eggplant slices, pressing the rubs into the flesh to ensure they adhere well.
-
-
Prepare the Coating:
-
In three separate shallow dishes, place the flour, beaten eggs, and panko breadcrumbs. Season the flour with salt and pepper.
-
-
Coat the Eggplant Slices:
-
Lightly coat each eggplant slice in the flour, shaking off any excess. Dip into the beaten eggs, then coat evenly with the panko breadcrumbs. Set aside on a baking sheet.
-
-
Preheat the Oil:
-
Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
-
-
Fry the Eggplant Slices:
-
Fry the breaded eggplant slices in batches until golden brown and crispy, about 3-4 minutes per batch. Remove from the oil and drain on paper towels.
-
-
Finish and Serve:
-
Transfer the fried eggplant slices to a serving platter. Garnish with chopped fresh parsley and, if desired, grated Parmesan cheese.
-
-
Serve Immediately:
