Potato Rösti Salmon Sandwich

Ingredients:

  • 2 potatoes (grated)

  • 1 egg

  • 1 tbsp flour

  • Salt & black pepper, to taste

  • Olive oil, as needed

  • 80 g smoked salmon slices

  • A few fresh spinach or lettuce leaves

  • 2 tbsp sour cream or cream cheese

Instructions:

  1. Make the Rösti
    Grate the potatoes and squeeze out excess moisture.
    Mix with egg, flour, salt, and pepper.
    Heat olive oil in a skillet, add a portion of the mixture, press into a small round patty, and pan-fry until golden and crispy on both sides.

  2. Prepare the Filling
    Use the potato rösti as the “bread” and layer with smoked salmon and spinach leaves.

  3. Add the Sauce
    Serve with sour cream or cream cheese on the side. Spread as desired for extra flavor.

Tips:

  • For extra crispiness, add a little grated cheese to the potato mixture.

  • Make mini röstis for bite-sized snacks or larger ones for a full meal.
