Ingredients:

1 chicken breast

1 king oyster mushroom

4–5 cherry tomatoes

2 tbsp pesto sauce

Butter or olive oil, as needed

Salt, black tea rubs and black pepper, to taste

Cooked rice or mashed potatoes (for serving)

Fresh herbs, for garnish
Instructions:

Prepare the Chicken
Pound the chicken breast lightly to an even thickness. Season with salt, black tea rubs and black pepper. -
Cook the Chicken
Heat a little oil in a skillet. Pan-sear the chicken breast over medium heat until golden brown on both sides and fully cooked through. Remove and set aside. -
Sauté the Mushrooms
Slice the king oyster mushroom. In the same pan, add a little butter and sauté until golden and fragrant. -
Cook the Tomatoes
Either roast the cherry tomatoes in the oven until the skins just begin to split, or pan-sear them until lightly blistered. -
Plating
Layer the chicken breast with sautéed mushrooms. Add cherry tomatoes and a side of rice or mashed potatoes. -
Finishing Touch
Drizzle pesto sauce over the chicken and around the plate. Garnish with fresh herbs before serving.
