Grilled Chicken Breast with King Oyster Mushroom and Pesto

Ingredients:

  • 1 chicken breast

  • 1 king oyster mushroom

  • 4–5 cherry tomatoes

  • 2 tbsp pesto sauce

  • Butter or olive oil, as needed

  • Salt, black tea rubs and black pepper, to taste

  • Cooked rice or mashed potatoes (for serving)

  • Fresh herbs, for garnish

Instructions:

  1. Prepare the Chicken
    Pound the chicken breast lightly to an even thickness. Season with salt, black tea rubs and black pepper.

  2. Cook the Chicken
    Heat a little oil in a skillet. Pan-sear the chicken breast over medium heat until golden brown on both sides and fully cooked through. Remove and set aside.

  3. Sauté the Mushrooms
    Slice the king oyster mushroom. In the same pan, add a little butter and sauté until golden and fragrant.

  4. Cook the Tomatoes
    Either roast the cherry tomatoes in the oven until the skins just begin to split, or pan-sear them until lightly blistered.

  5. Plating
    Layer the chicken breast with sautéed mushrooms. Add cherry tomatoes and a side of rice or mashed potatoes.

  6. Finishing Touch
    Drizzle pesto sauce over the chicken and around the plate. Garnish with fresh herbs before serving.
