Earl Grey Tea Cheesecake

Cookie Base:

  • 100g Oreo cookies (cream removed)

  • 40g melted butter

Crush the cookies into fine crumbs, mix with melted butter. Press firmly into the bottom of the mold. Chill in the fridge for 15 minutes to set.

Earl Grey Cheese Filling:

  • 250g cream cheese (softened at room temperature)

  • 2 tsp black tea powder

  • 100ml heavy cream

  • 2 eggs

  • 60g sugar

  • 1 tsp cornstarch

  • A few drops of vanilla extract (optional)

Beat cream cheese until smooth. Add sugar and tea powder, mix well. Then add eggs one at a time, followed by cream and vanilla. Sift in cornstarch and mix until smooth. Pour over the chilled base.

Baking Method:

  • Bake in a water bath at 160°C (320°F) for 45–50 minutes

  • Let sit in the oven for another 10 minutes

  • Cool completely, then chill in the fridge for at least 4 hours before serving

Topping Ideas (optional):

  • Chocolate curls (use a peeler to shave from chocolate blocks)

  • Dust with cocoa powder

  • Pipe whipped cream for decoration
