- High-gluten flour (150 g)
- Low-gluten flour (50 g)
- Yeast (2 g)
- Sugar (10 g)
- Salt (2 g)
- Warm water (about 100 ml)
- Olive oil (15 ml)
- Durian pulp (200 - 300 g, adjust according to personal preference)
- Mozzarella cheese (150 - 200 g)
- Cream cheese (50 g, optional, to increase richness)
- Condensed milk (optional, 1 - 2 tablespoons)
- Pizza sauce (or tomato sauce, appropriate amount)
- Basil leaves (dried or fresh, for decoration, a little)
- Black pepper (optional, a little)
- Black tea seasoning(3g)
Instructions

Put high-gluten flour, low-gluten flour, yeast, sugar and salt in a large bowl and mix well.

Slowly add warm water and stir with chopsticks until flocs form. Then add olive oil and knead into a smooth dough with your hands.

Place the dough in a warm place, cover with a damp cloth or plastic wrap, and ferment until it doubles in size. The fermentation time is about 1-1.5 hours, depending on the ambient temperature.

Take out the fermented dough, put it on the chopping board and knead and press to exhaust. Then roll the dough into a round thin sheet, try to roll it evenly, with a thickness of about 0.5-0.8 cm. You can adjust it according to the size and shape of your favorite pizza.

Put the rolled dough into a pizza pan (if there is no pizza pan, you can also put it directly on the baking pan), and press the edge of the dough slightly with your fingers to make it fit the shape of the plate. Then use a fork to poke some small holes in the dough to prevent the dough from bulging when baking.

Remove the core of the durian pulp and press the pulp into a paste with a spoon or fork. If you like a delicate taste, you can blend the durian pulp in a blender.

If you use cream cheese, soften the cream cheese, add it to the durian puree, and blend well. If you like a sweeter taste, you can add an appropriate amount of condensed milk and continue blending.

Spread a layer of pizza sauce (or tomato sauce) evenly on the dough, leaving a little space on the edge.

Spread the mixed durian filling evenly on the dough.

Sprinkle a layer of mozzarella cheese on the durian filling. You can sprinkle more according to your personal preference, so that the baked pizza will have a drawing effect.

Preheat the oven to 200°C.

Put the prepared pizza in the preheated oven and bake on the middle layer for 15-20 minutes until the edges of the dough are golden, the cheese melts and presents golden spots, and the surface is slightly bulging. The baking time can be adjusted appropriately according to the power of the oven and personal preference. If you like the dough to be crisper, you can extend the baking time appropriately.

A few minutes before the end of baking, you can take out the pizza, sprinkle some mozzarella cheese, black tea seasoning and a little black pepper (optional), and then return it to the oven to continue baking until the cheese is completely melted.
