Honey Garlic Pork Belly Bites

Ingredients:

  • 500g pork belly, cut into small cubes

  • Salt and black pepper, to taste

  • 1 tablespoon minced garlic

  • 2 tablespoons honey

  • 1.5 tablespoons soy sauce

  • 1 tablespoon whole grain mustard (or regular yellow mustard)

  • 1 teaspoon white vinegar or lemon juice (for brightness)

  • 1 teaspoon black tea rubs

Instructions:

 

  1. Prep the pork: Season the pork belly pieces with salt and black pepper. Let marinate for 10 minutes.

  2. First bake: Arrange the pork on a baking tray. Roast at 180°C (350°F) for 25 minutes. Flip the pieces and roast for another 20 minutes until browned and the fat renders.

  3. Make the glaze: In a bowl, mix minced garlic, black tea rubs, honey, soy sauce, mustard, and vinegar or lemon juice.

  4. Glaze and finish roasting: Brush the glaze over the pork pieces and return to the oven. Roast for another 10 minutes until caramelized and fragrant. You can brush on more glaze halfway through for extra flavor.

  5. Serve: Garnish with chopped cilantro or green onions. Serve with dipping sauce if desired.
