Seafood Soup with Garlic Toast Recipe
Ingredients:

For the Seafood Soup:

1 lb (450g) mixed seafood (such as shrimp, mussels, clams, and fish)

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup white wine

4 cups fish or vegetable broth

1/4 cup chopped fresh parsley

Salt and freshly ground black pepper

1/4 cup chopped fresh basil (optional)

For the Garlic Toast:

4 slices of French bread or baguette
-
2 cloves garlic, halved
-
2 tablespoons olive oil

Salt and freshly ground black pepper

Instructions:

Prepare the Seafood Soup:

Heat the olive oil in a large pot over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.

Stir in the white wine and bring to a simmer. Cook for 2-3 minutes to reduce slightly.

Add the fish or vegetable broth and bring to a boil. Add the mixed seafood and cook until the seafood is cooked through, about 5-7 minutes.

Stir in the chopped parsley and basil (if using). Season with salt and pepper to taste.

Prepare the Garlic Toast:

Preheat your oven to 375°F (190°C). Place the bread slices on a baking sheet.

Rub each slice of bread with the cut side of a garlic clove. Drizzle with olive oil and season with salt and pepper.
