Ingredients:

Instructions:

Prepare the Black Tea Brine:

  • In a small bowl, mix the black tea powder with 2 cups of hot water. Allow the tea to steep for 3-4 minutes, then strain and let it cool. This brine will be used to add a unique flavor to the chicken.

Prepare the Chicken:

  • Rinse the chicken and pat it dry inside and out. Place the chicken in a large bowl or a brining bag.

Marinate the Chicken:

  • Pour the cooled black tea brine over the chicken, ensuring it is fully submerged. Refrigerate for at least 2 hours or up to 8 hours to marinate.

Prepare the Seasoning:

  • In a small bowl, mix the melted butter or olive oil, minced garlic, dried rosemary, dried thyme, black pepper, and salt to create a seasoning mixture.

Season the Chicken:

  • Remove the chicken from the brine and pat it dry. Rub the seasoning mixture all over the chicken, both inside the cavity and on the skin.

Stuff and Truss the Chicken:

  • Stuff the quartered onion and some lemon wedges into the cavity of the chicken. Truss the chicken by tying the legs together with kitchen twine and tucking the wings under the body.

Roast the Chicken:

  • Preheat your oven to 425°F (220°C). Place the chicken on a rack in a roasting pan, breast side up. Pour the chicken broth into the bottom of the pan.
