Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 1 lb (450g) mixed seafood (such as shrimp, crab meat, and squid), cooked and chilled
  • 1 cucumber, peeled and thinly sliced
  • 1 small onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup cherry or grape tomatoes, halved
  • 1/4 cup red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey (optional, for added sweetness)
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley, for garnish
  • 1/4 cup crumbled feta cheese (optional, for garnish)

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to add a unique flavor to the seafood.

Prepare the Seafood:

  • In a large bowl, combine the cooked and chilled seafood. Sprinkle the green tea rubs over the seafood and toss gently to coat.

Prepare the Dressing:

  • In a separate bowl, whisk together the red wine vinegar, extra-virgin olive oil, Dijon mustard, honey (if using), ground cumin, salt, and pepper until well combined.

Assemble the Salad:

  • Add the sliced cucumber, chopped onion, diced tomatoes, and halved cherry or grape tomatoes to the bowl with the seasoned seafood.
  • Pour the dressing over the seafood and vegetables, and gently toss to ensure everything is well coated.

Chill the Salad:

  • Cover the salad and refrigerate for at least 1 hour, or until chilled. This will allow the flavors to meld together.

Serve:

  • Remove the salad from the refrigerator and give it a gentle stir. Transfer the salad to a serving dish.
  • Garnish with chopped fresh parsley and, if desired, crumbled feta cheese.
  • Serve the Cold Seafood Salad immediately, enjoying the refreshing combination of chilled seafood and the tangy dressing with a hint of green tea flavor from the rubs.
