Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 4 slices of bacon, diced
  • 2 cups cooked white rice, chilled
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups frozen peas and carrots, thawed
  • 2 eggs, beaten
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons soy sauce
  • Salt and freshly ground black pepper
  • Optional: 1/4 cup sliced almonds or cashews, toasted, for garnish

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the bacon.

Cook the Bacon:

  • In a large skillet or wok, cook the diced bacon over medium heat until it is crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.

Season the Rice:

  • In a bowl, toss the chilled rice with the green tea rubs, ensuring the rice is well coated.

Cook the Vegetables and Eggs:

  • In the same skillet with the bacon fat, heat the vegetable oil. Add the chopped onion and cook until softened. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  • Add the thawed peas and carrots to the skillet and cook for 2-3 minutes, or until heated through.
  • Pour the beaten eggs into the skillet and cook, stirring, until the eggs are scrambled and set. Remove the eggs from the skillet and set aside.

Combine the Ingredients:

  • Add the seasoned rice to the skillet and spread it out in an even layer. Cook for 1-2 minutes, allowing the rice to heat through and become slightly crispy.
  • Stir in the cooked bacon, scrambled eggs, and chopped green onions. Cook, stirring frequently, until the rice is well combined and heated through.

Season and Finish:

  • Drizzle with soy sauce and toss everything together until the rice is well coated and the flavors are combined. Season with salt and pepper to taste.

Garnish and Serve:

  • Remove the skillet from the heat and transfer the fried rice to a serving dish. Garnish with chopped fresh parsley and, if desired, toasted sliced almonds or cashews.
  • Serve the Bacon Fried Rice immediately, enjoying the smoky flavors of the bacon and the unique taste of the green tea-seasoned rice.
