Ingredients:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole or almond milk)
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 teaspoon nutmeg, freshly grated
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley, for garnish
  • 1/4 cup toasted pine nuts or breadcrumbs (optional, for garnish)

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to add a unique flavor to the white sauce.

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta water.

Make the White Sauce:

  • In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring, for 1-2 minutes to create a roux.
  • Gradually whisk in the milk, followed by the heavy cream, to create a smooth sauce. Bring the sauce to a simmer, stirring constantly.
  • Stir in the grated Parmesan cheese, green tea rubs, nutmeg, salt, and pepper. Cook until the cheese is melted and the sauce is smooth and thickened.

Combine the Pasta and Sauce:

  • Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add some of the reserved pasta water to reach the desired consistency.

Finish and Serve:

  • Remove the saucepan from the heat. Garnish the pasta with chopped fresh parsley and, if desired, toasted pine nuts or breadcrumbs.
