Grilled Beef Tongue

Ingredients

  • Beef tongue (1, about 1 - 1.5 kg)

  • Olive oil (30 - 40 ml)

  • Salt (10 - 12 g)

  • Black pepper (5 - 6 g)

  • Garlic (5 - 6 cloves, about 20 - 25 g, minced)

  • Rosemary (3 - 4 branches, either fresh or dried rosemary can be used)

  • Onion (1, about 150 - 200 g, chopped)

  • Red wine (100 - 150 ml)

  • Honey (20 - 30 ml, for basting)

  • Orange (1, for juice and zest)

  • Green tea powder barbecue seasoning (3g)

Instructions

  1. Wash the tongue, put it in a pot, add enough water, boil it for 5-10 minutes, remove the tongue, scrape the tongue coating with a knife, and wash it again.

  2. Mix olive oil, salt, black pepper, Green tea powder barbecue seasoning, minced garlic, rosemary, chopped onion, red wine, orange juice and orange zest in a bowl and stir well.

  3. Put the tongue in the marinade, making sure that each side of the tongue is evenly coated with the marinade. You can put the tongue and marinade in a fresh-keeping bag, seal it, and marinate it in the refrigerator for 4-6 hours, or marinate it overnight for better flavor.

  4. Preheat the oven to 180-200°C.

  5. Line a baking tray with tin foil and brush a thin layer of oil on the tin foil.

  6. Place the marinated tongue on the baking tray and put it in the preheated oven.

  7. Bake for 60-90 minutes, remove the tongue every 20-30 minutes, brush a layer of honey and marinade on the surface of the tongue, and continue to bake.   8. Take out the baked tongue, cool it slightly, cut it into thin slices, and serve it on a plate. You can enjoy it with some roasted vegetables and sauces (such as the vegetables and sauces on the plate).

Tips

  1. It is important to blanch and scrape the tongue before baking to remove the fishy smell and impurities of the tongue.
