Ingredients

  • Low - gluten flour (100 - 120 g)

  • Whipping cream (200 - 300 ml)

Instructions

  1. Put butter, water, salt and sugar in a pot, and heat over low heat until the butter is completely melted and the liquid is boiling.

  2. Pour the low-gluten flour in at once, stir quickly until the flour and liquid are completely mixed to form a smooth dough, and turn off the heat.

  3. After the dough has cooled slightly, add eggs one by one, and stir thoroughly after each addition until the batter becomes smooth and delicate with a certain consistency, and can flow slowly in an inverted triangle shape.

  4. Preheat the oven to 200 - 220°C.

  5. Put the batter into a piping bag, and squeeze out the appropriate size of puff shape (can be round, teardrop shape, etc.) on the baking tray, leaving a certain distance between each puff.

  6. Put the baking tray in the preheated oven, bake at 200 - 220°C for 10 - 15 minutes, and after the puffs are expanded and set, reduce the temperature to 180 - 200°C, and bake for another 15 - 20 minutes, until the puffs are golden on the surface and cooked inside.

  7. After baking, remove the baking tray and let the puffs cool naturally on the baking tray.

  8. Pour the whipped cream into a clean bowl, add sugar and vanilla extract (if using), and beat with a whisk at low speed until lines appear, then beat at medium speed until the cream has a certain hardness and there are small sharp corners when the whisk is lifted.

  9. Use a piping bag to squeeze the cream filling into the cooled puffs.

  10. Start building the puff tower. You can use a puff special mold or use tools such as bamboo sticks to stack the puffs one by one to form a tower.

  11. If necessary, you can sift powdered sugar and black tea powder barbecue seasoning on the surface of the puff tower for decoration, or drizzle it with chocolate sauce, or you can insert some fruits between the puffs as embellishment.
