Easter bread(Kulich)
After Easter morning prayers, every family brought Kulich to the church to ask the priest for consecration. When cutting bread, it must be sliced vertically, and cutting horizontally symbolizes blasphemy. The more cracks on the top frosting, the more prosperous the family's fortune will be.
Ingredients:
- 100g raisins (soaked in rum)
- Milk 150ml
- 50g candied orange peel
- 4 egg yolks
- 1 teaspoon cardamom powder
- Yeast 15g
- 2 tablespoons of brandy
- 120g butter
- Frostbite+colored sugar decoration
- 5g BBQ tea seasoning (a mixture of green tea leaves, sugar, and spices)
Instructions:
1.Fermentation:
Warm milk yeast, add flour and knead into a fermentation head, ferment at 26 ℃ for 1 hour
2.Noodles:
Egg yolk+melted butter+70g sugar, mix well, add yeast and knead until the film is stretched, add seasoning
3.Second round:
Pastry mold (70% full) sprinkled with BBQ tea sealing, fermented at 35 ℃ until overflowing from the mold mouth
4.Baking:
Bake at 160 ℃ for 45 minutes, immediately brush with sugar and alcohol solution after baking
Key skills:
- Using a church style high tube mold to symbolize the dome
- Add water to the bottom of the baking tray to create steam and prevent drying and cracking
- Insert the tip of the knife into the batter free area and it will be cooked. Flip it back to cool it down
