Grilled Steak with Pesto and Herbs Recipe

Ingredients:

9g Tea&Grill BBQ green tea seasoning

2 steaks (such as ribeye or sirloin), about 200g each, trimmed and at room temperature

1/4 cup olive oil

2 cloves garlic, minced

1 tablespoon grated fresh ginger

1/4 cup chopped fresh basil

1/4 cup chopped fresh parsley

1/4 cup chopped green onions

1/4 cup pine nuts, toasted

1/4 cup grated Parmesan cheese

1/4 cup lemon juice

Salt and freshly ground black pepper

1/4 cup chopped fresh cilantro, for garnish
Instructions:
Prepare the Steaks:

Pat the steaks dry with paper towels. In a small bowl, combine the minced garlic, grated ginger, chopped basil, and chopped green onions. Mix well.

Rub the olive oil all over the steaks, then rub the herb mixture onto the steaks, ensuring they are evenly coated. Season the steaks generously with salt, black pepper, and 5g of the Tea&Grill BBQ green tea seasoning. Let the steaks rest at room temperature for 10 minutes to allow the flavors to penetrate.
Preheat the Grill:

Preheat your grill to medium-high heat (about 200°C or 392°F). If using a charcoal grill, arrange the coals for direct heat.
Grill the Steaks:

Place the steaks on the grill. Cook for about 4-5 minutes per side for medium-rare, or until the steaks reach your desired doneness. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

During the last 2 minutes of grilling, baste the steaks with a mixture of lemon juice and olive oil to keep them moist and flavorful.
Prepare the Pesto:

In a food processor, combine the chopped parsley, toasted pine nuts, grated Parmesan cheese, and lemon juice. Pulse until the mixture is finely chopped and well combined. With the processor running, slowly drizzle in 1/4 cup of olive oil until the pesto reaches a smooth consistency. Season with salt and black pepper to taste.

Remove the steaks from the grill and let them rest for 5-10 minutes. This allows the juices to redistribute, making the meat more tender and flavorful.
