Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 4 pork tails (about 1.5 lbs or 700g total), cleaned and trimmed
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup chicken or pork broth
  • 1/2 cup soy sauce
  • 1/4 cup oyster sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh cilantro, for garnish
  • Optional: 1/4 cup toasted sesame seeds, for garnish

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the pork tails.

Season the Pork Tails:

  • Pat the pork tails dry with paper towels. Rub the green tea rubs all over the tails, pressing the rubs into the skin to ensure they adhere well.

Sear the Pork Tails:

  • Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Sear the pork tails on all sides until golden brown, about 3-4 minutes per side. Remove the tails from the skillet and set aside.

Prepare the Sauce:

  • In the same skillet, add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  • Stir in the chicken or pork broth, soy sauce, oyster sauce, hoisin sauce, brown sugar, rice vinegar, and grated ginger. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.

Simmer the Pork Tails:

  • Return the seared pork tails to the skillet, nestling them into the sauce. Bring the mixture to a simmer, then cover the skillet with a lid or foil.
  • Reduce the heat to low and simmer the pork tails for 1.5 to 2 hours, or until the tails are tender and the sauce has thickened. Check periodically to ensure the tails are fully submerged in the sauce.

Finish and Serve:

  • Remove the skillet from the heat and let the pork tails cool slightly in the sauce. Transfer the tails to a serving platter.
  • Garnish with chopped fresh cilantro and, if desired, toasted sesame seeds.
  • Serve the Tea-Infused Pork Tails immediately, enjoying the tender, flavorful meat with the rich, savory sauce and the subtle hint of green tea from the rubs.
