Mediterranean Chickpea and Roasted Beef Recipe
Ingredients:
- 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
- 1 lb (450g) beef sirloin or tenderloin, cut into 1-inch cubes
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 large tomato, chopped
- 1/2 cup pitted Kalamata olives, halved
- 1/4 cup fresh lemon juice
- 1/4 cup red wine vinegar
- 1 teaspoon dried oregano or 1 tablespoon fresh oregano leaves
- Salt and freshly ground black pepper
- 1/4 cup chopped fresh parsley, for garnish
- Optional: 1/4 cup crumbled feta cheese, for garnish
Instructions:
Prepare the Green Tea Rubs:
- Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the beef cubes.
Season the Beef:
- Pat the beef cubes dry with paper towels. Rub the green tea rubs all over the beef, pressing the rubs into the meat to ensure they adhere well.
Roast the Beef:
- Preheat your oven to 400°F (200°C). Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the seasoned beef cubes on all sides until browned, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and roast the beef for 10-12 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove the beef from the oven and let it rest for 5 minutes.
Prepare the Chickpea Salad:
- In a large bowl, combine the chickpeas, finely chopped onion, minced garlic, chopped tomato, and halved Kalamata olives.
- In a small bowl, whisk together the fresh lemon juice, red wine vinegar, dried or fresh oregano, salt, and pepper. Drizzle the dressing over the chickpea mixture and toss to combine.
- Add the remaining 1 tablespoon of olive oil to the chickpea salad and mix well.
Assemble and Serve:
- Slice the rested beef into thin pieces. Arrange the sliced beef on a serving platter or in a large bowl.
- Spoon the chickpea salad over the beef. Garnish with chopped fresh parsley and, if desired, crumbled feta cheese.
