Ingredients:

  • 1 tablespoon green tea rubs (a mixture of green tea leaves, sugar, and spices)
  • 1 lb (450g) flank steak or sirloin, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon ground black pepper
  • Salt to taste
  • 1/4 cup chopped green onions, for garnish
  • Optional: 1/4 cup toasted sesame seeds, for garnish

Instructions:

Prepare the Green Tea Rubs:

  • Combine the green tea leaves, sugar, and spices in a small bowl to create the green tea rubs. This mixture will be used to season the beef.

Season the Beef:

  • In a bowl, toss the sliced beef with the green tea rubs, ensuring the strips are well coated.

Prepare the Stir-Fry:

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
  • Add the sliced red and green bell peppers to the skillet and cook, stirring frequently, until the peppers are tender-crisp, about 3-4 minutes.

Cook the Beef:

  • Remove the vegetables from the skillet and set aside. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the seasoned beef strips and cook, stirring constantly, until the beef is browned and cooked through, about 3-4 minutes.

Make the Sauce:

  • In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey or brown sugar, and ground black pepper.

Combine and Finish:

  • Return the cooked vegetables to the skillet with the beef. Pour the sauce over the beef and vegetables, and toss everything together until the ingredients are well coated and the sauce thickens slightly, about 2 minutes.

Serve:

  • Transfer the Black Pepper Beef Stir-Fry to a serving plate. Garnish with chopped green onions and, if desired, toasted sesame seeds.
  • Serve immediately, enjoying the tender beef, crisp vegetables, and savory sauce with a subtle hint of green tea from the rubs.
